Oven Baked Omelette

  1. Preheat oven to 350 degrees (175 C.).
  2. Spray 10 to 12 inch skillet with vegetable spray.
  3. Put all ingredients, except eggs and milk and cheese, in skillet to brown.
  4. Whisk eggs and milk.
  5. Pour egg mixture over skillet mixture.
  6. Don't stir.
  7. Add salt and pepper.
  8. When top is set, run a spatula round edge.
  9. Wrap skillet handle in foil and stick in oven uncovered.
  10. Bake for about 20 minutes.
  11. Sprinkle cheese over top and return to oven to melt cheese.
  12. Remove and slice into wedges.
