Spicy Chilli Prawns or Shrimp
- 1 small red onion, finely chopped
- 12 cup olive oil (4fl oz)
- 1 tablespoon lime, grated rind
- 2 -3 garlic cloves, crushed
- 12 cup lime juice
- 2 -3 small red chilies, seeded and finely chopped
- 1 tablespoon ginger, grated
- 1 stalk lemongrass, white part only, finely chopped
- 1 teaspoon ground turmeric
- Combine all listed ingredients in a large glass or ceramic bowl.
- Add prawns and toss well, then cover & refrigerate overnight, turning the prawns once or twice while marinating.
- When ready to cook, drain the prawns, reserving the marinade.
- Heat the wok until very hot and stir-fry the prawns in three batches over high heat until they are pink and very crispy, then remove them from the wok.
- Pour the reserved marinade into the wok and bring to the boil, then return the prawns to the wok and toss well.
- Season & serve immediately.
