Cherry Compote

  1. Bring cherry cider and dried cherries to boil in heavy large saucepan.
  2. Remove from heat.
  3. Cover; let steep 20 minutes.
  4. Bring dried cherry mixture to simmer.
  5. Mix in cherries and sugar.
  6. Simmer until cherries soften, about 2 minutes for fresh and 5 minutes for frozen.
  7. Mix brandy and cornstarch in bowl to blend.
  8. Slowly stir into cherry mixture.
  9. Cook over medium heat until mixture boils and thickens, about 1 minute.
  10. Cool.
  11. Cover; chill until cold.
  12. (Can be made 2 days ahead.)
