Southwest Salad
- 1 can Black beanies drained & rinsed
- 1 Yellow pepper chopped
- 1 Orange pepper chopped
- 1 pints Cherry or grape tomatoes cut in half
- 2 tbsp Jalapeno remove seeds and white part
- 1/2 tsp Lime zest
- 1 can Corn drained
- 1/4 cup Chopped cilantro
- 1/4 cup Lime juice. About 2 small limes
- 1/2 cup Olive oil
- 1 tsp Kosher salt
- 1/2 tsp Pepper
- 1/4 tsp Cheyenne pepper
- 4 clove Crushed garlic
- Put all ingredients for dressing in food processor or nutribullet and blend until all combined.
- Pour over veggies.
- Cut up 2 avocados and put on salad just before serving.
