Deep Fried Tripe
- 2 lb boiled and tender cow tripe
- 2 tbsp salt in water
- 2 tsp pepper
- 1 large onion cut in course pieces
- 1 1/2 cup flour
- 1/8 tsp ground cayenne
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 **** salt and pepper are approxiamates
- Tripe should either be put boiled or put in the pressure cooker.... add water to cover tripe completely... if you boil you will need to boil for almost 3-4 hours.
- If it is put in a pressure cooker it will take about 50 minutes.
- After adding the water add salt, pepper, and onion.
- cook for amount of time that is listed in step #1.
- I usually cook my tripe at night while I'm doing dishes or cleaning the kitchen.
- I take the tripe out of the broth and put in storage container.
- If left in the broth it will absorb the salt as it cools.
- Tripe, once cool, cut in 2-3" strips.
- Pour flour into a mixing bowl and mix in cayenne, garlic, onion, salt, and pepper.. mix well.
- dredge tripe through flour and fry until golden brown.
- Drain on paper towel...
- I like to use my fry baby.
- They are kinda like cracklings... good with a cold beer.
- *** There is another method that my cousin uses..... make an egg wash and dip tripe in it.... then dip in plain bread crumbs and deep fry....
- In the islands they serve it with a vinegar dipping sauce.
