Wilted-Spinach and Red-Onion Salad

  1. In a large skillet, warm olive oil over medium heat.
  2. Add onion and garlic; cook 1 minute.
  3. Stir in spinach, water, and salt.
  4. Cook 1 minute or just until spinach leaves start to wilt.
  5. Remove from heat and transfer to large serving bowl.
  6. Sprinkle salad with vinegar and black pepper.
  7. Serve.
