Wilted-Spinach and Red-Onion Salad
- 2 tbsp. olive oil
- 1/2 medium red onion
- 3 clove garlic
- 2 bag small spinach leaves
- 2 tbsp. water
- 3/4 tsp. salt
- 2 tbsp. sherry vinegar
- 1/2 tsp. ground black pepper
- In a large skillet, warm olive oil over medium heat.
- Add onion and garlic; cook 1 minute.
- Stir in spinach, water, and salt.
- Cook 1 minute or just until spinach leaves start to wilt.
- Remove from heat and transfer to large serving bowl.
- Sprinkle salad with vinegar and black pepper.
- Serve.
