State Fair Oatmeal Cookies
- 3 eggs, well beaten
- 1 1/4 c. raisins
- 1 tsp. vanilla
- 1 c. shortening
- 1 c. brown sugar
- 1 c. granulated sugar
- 2 Tbsp. wheat germ (optional)
- 2 1/2 c. flour
- 1 tsp. salt (optional)
- 2 tsp. soda
- 1 tsp. cinnamon
- 2 c. oatmeal
- 1/2 c. walnuts, chopped
- Combine eggs, raisins and vanilla.
- Let stand for 1 hour. Thoroughly cream together shortening and brown and white sugars. Sift flour, soda and cinnamon into sugar mixture.
- Mix well. Blend in eggs and raisins, oatmeal and nuts.
- (Dough will be stiff.)
- May need to blend with hands.
- Push dough from heaping teaspoonfuls onto ungreased cookie sheet.
- Flatten between hands and place on cookie sheet.
- Bake at 350u0b0 for 10 to 12 minutes or until lightly brown.
- Do not overbake.
