Yaka Soba
- 3 to 4 stalks celery, cut in 2-inch strips, 1/4-inch wide
- 3 green peppers, cut in strips
- 2 onions, cut in strips, or even better, use 1 bunch green onions
- 4 carrots, cleaned and sliced in strips
- string beans (in winter use 1/2 can French-style green beans)
- mushrooms (may use small can if fresh not on hand)
- 3 to 4 c. shredded cabbage
- 1 1/2 c. uncooked regular white rice, cooked as directed for cooking regular rice
- 1 lb. bacon, fried crisp and cut up in small pieces
- 2 to 3 Tbsp. cooking oil
- Stir-fry celery, carrots, onions and green peppers until tender-crisp.
- If using fresh green beans, they should also be added with these ingredients.
- (Approximate cooking time is 1 hour.)
- Add cabbage and mushrooms (and canned green beans) and cook, covered, for about 20 to 30 minutes longer.
- Add the bite-size pieces of browned crisp bacon.
- Serve stir-fry over rice with soy sauce to taste.
