Caribou Sausage

• 4 pounds caribou
• 2 pounds pork lean
• 1 large onions chopped
• 2 pounds potatoes grated
• 2 tablespoons salt
• 1/2 teaspoon black pepper
• 1 teaspoon allspice
• 1/2 teaspoon cayenne pepper

1. Grind together all the meats with the onion.
2. Next mix the potatoes with the meats.
3. Add spices and mix thoroughly.
4. Prepare in sausage casings.
