Christmas Divinity

  1. In top of double boiler over hot water, melt shortening; add cocoa and stir until smooth.
  2. Set aside over warm water.
  3. In large saucepan, combine sugar, syrup and water; cook over medium heat, stirring until sugar dissolves.
  4. Lower heat slightly and cook uncovered, without stirring, to 260u0b0 (hard-ball stage).
  5. Remove from heat.
  6. Immediately, pour syrup in a thin stream into egg whites, beating on high speed of electric mixer.
  7. Add vanilla; beat until candy begins to hold its shape.
  8. Quickly blend in cocoa mixture, nuts and cherries.
  9. Drop by teaspoons onto wax paper.
