Sue'S Vegetable Beef Soup
- 3 medium potatoes, chopped
- 2 carrots, sliced
- 1 lb. ground beef
- 1 medium onion, chopped
- 1 (No. 2) can whole kernel corn
- 1 (No. 2) can green beans
- 1 (No. 2) can tomato pieces
- 2 stalks celery, chopped
- onion salt
- garlic powder
- chili powder
- celery seed
- 2 bay leaves
- 2 cans water
- Place raw vegetables in large micro-proof bowl.
- Season with dash of onion salt, garlic powder and plenty of good fresh ground pepper.
- Add 1/3 cup water.
- Cover and microwave on High until just tender.
- Crumble beef in a large pot over Medium-high heat. Sprinkle with chili powder until surface is well dusted.
- Add onion and saute until meat is browned.
- Add canned and fresh vegetables, including water and other vegetable broths.
- Soup should appear thinner than you like to eat it.
- Add seasonings to taste.
- Bring to a boil, cover and reduce heat and simmer until either:
- (a) the ball game is over, (b) the house is clean, (c) the Sunday crossword puzzle is complete (2 to 3 hours), stirring occasionally.
