Stuffed Pork Chops (Or Chicken)
- 1 cup Uncooked Bacon, Chopped
- 1 whole Medium Sized Onion, Diced
- 1 whole Tomato, Diced
- 2 sprigs Rosemary, Chopped (or 1 Tablespoon Dried)
- 1 package (10 Oz. Package) Frozen Chopped Spinach, Thawed And Drained
- 1/2 cups Gruyere Cheese (or Swiss)
- 4 whole Pork Chops
- 1/2 cups Chicken Stock
- Salt And Pepper
- Preheat oven to 400 degrees.
- Cook bacon and onions and cook until onion is slightly caramelized and bacon is cooked.
- Add tomato, rosemary, and spinach and cook until warmed through.
- Add salt and pepper to taste.
- Remove pan from heat and add cheese.
- Cut pockets into the chops and then stuff the chops with the filling.
- Place filled chops in a 9x13 baking dish, placing extra filling on top of chops.
- Pour stock around the pork chops.
- Bake covered for 45 minutes or until pork is done.
