Texas Lasagna
- 1 lb. ground beef
- 1/2 c. onion
- 1 clove garlic, minced
- 1 (10 oz.) pkg. frozen chopped spinach
- 1 1/2 lb. jar spaghetti sauce with mushrooms
- 1 (8 oz.) can tomato sauce
- 1 (6 oz.) can tomato paste
- 1/2 tsp. salt
- 1/4 to 1/2 tsp. pepper
- 7 oz. shell macaroni
- 1/2 c. soft bread crumbs
- 2 eggs, well beaten
- 1/2 c. salad oil
- 1 c. shredded American cheese
- Cook ground beef, onion and garlic until meat is thoroughly brown; drain.
- To meat, add spaghetti sauce, tomato sauce, tomato paste, salt and pepper.
- Simmer 10 minutes.
- Set aside.
- Cook frozen spinach according to package directions.
- (Do not season.) Drain.
- Cook shell macaroni until soft; drain.
- Mix together bread crumbs, eggs and salad oil.
- In a mixing bowl, mix together spinach, macaroni and bread and egg mixture.
- In a lightly greased oblong (9 x 13-inch) casserole dish, spread spinach and macaroni mixture.
- Spread meat sauce on top.
- Bake 30 minutes at 350u0b0.
- Top with shredded cheese and let stand until cheese melts.
- Serve with fresh salad and garlic bread.
- Yield:
- 8 servings.
