Antipasto On A Stick Recipe
- 8 slc cooked beef, cut in 1" strips
- 16 x ripe olives, pitted
- 8 sm cherry tomatoes
- 8 x provolone cheese cubes
- 8 x artichoke heart quarters liquid removed
- 1/2 c. Italian salad dressing
- 2 c. bibb or possibly romaine lettuce
- Roll up beef strips pinwheel fashion.
- Alternately arrange beef pinwheels, olives, tomatoes, cheese, artichoke hearts on eight 9-inch skewers.
- Place kabobs in shallow container; pour dressing over kabobs and chill several hrs or possibly overnight.
- To serve, arrange on top of lettuce.
- Pour remaining dressing over all.
