Chocolate Banana Bread

  1. Heat oven to 350F.
  2. Heat chocolate, unwrapped, in microwavable bowl on HIGH 1 to 2 minutes or until almost melted, stirring halfway through heating time.
  3. Remove from oven.
  4. Stir until chocolate is completely melted; set aside.
  5. Mix flour, baking soda and salt in large bowl.
  6. Beat eggs in medium bowl; stir in melted chocolate, sugar, buttermilk, 1/2 cup oil and banana.
  7. Add to flour mixture; stir just until moistened.
  8. (Batter will be lumpy.)
  9. Stir in 2 cups of the cereal.
  10. Spoon batter into greased 9x5-inch loaf pan.
  11. Crush remaining 1/2 cup cereal in small bowl.
  12. Drizzle with 1 teaspoon oil; stir until crumbly.
  13. Sprinkle evenly over batter.
  14. Bake 50 to 55 minutes or until toothpick inserted in center comes out clean.
  15. Cool 10 minutes; remove from pan.
  16. Cool completely on wire rack.
