Playhouse Cutlets Recipe
- 6 (4 ounce.) veal cutlets, pounded
- 6 (1 ounce.) slices ham
- 6 (1 ounce.) slices Swiss cheese
- 3 c. bread crumbs, seasoned
- 6 Large eggs, beaten
- 2 c. flour
- Place veal cutlets down, putting a piece of ham and cheese on top of each cutlet.
- Roll the cutlet up.
- Have 3 bowls: 1 for flour, 1 for beaten Large eggs and 1 for bread crumbs.
- Dip rolled up cutlets into flour first, then pat off excess flour.
- Dip in Large eggs, then place in bread crumbs.
- Repeat process (not in flour).
- Pan fry veal in oil for about 1 1/2 min on each side.
- The bake for 30 min at 300 degrees.
- Serves 6.
