Butter Cookies(Yields 5 To 6 Dozen)

  1. Cream butter and add sugar, beating until creamy.
  2. Add egg yolks one at a time and beat.
  3. Mix lemon juice and soda; add to mixture.
  4. Add flour and mix.
  5. Beat egg whites until stiff and fold into batter.
  6. Chill dough 2 to 3 hours or overnight.
  7. Take 1/4 of dough and roll out on floured board.
  8. Cut into shapes using cookie cutters.
  9. Continue with remainder of dough.
  10. Place cut-outs on cookie sheets and decorate with nuts and sprinkles.
  11. Bake at 350u0b0 for a total of 8 minutes.
  12. For more even baking, bake on bottom shelf for 4 minutes, rotate sheets and move to top shelf and bake remaining 4 minutes.
  13. Cookies will not be brown.
