Ham N' Cheese Scalloped Potatoes
- 6 cups thinly sliced potatoes
- 4 cups cubed 1 inch cooked ham
- 1 cup thinly sliced onion, separated into rings
- 14 cup butter or 14 cup margarine
- 13 cup all-purpose flour
- 1 teaspoon dry mustard
- 12 teaspoon pepper
- 2 cups milk
- 3 cups shredded cheddar cheese
- 2 tablespoons chopped fresh chives
- Heat oven to 350 degrees.
- In 13x9 pan layer potatoes, ham and onion.
- In 2 quart saucepan melt butter until sizzling.
- Stir in flour, mustard and pepper.
- Cook over medium heat, stirring constantly, until smooth and bubbly (1 minute).
- Add milk, continue cooking, stirring occasionally, until sauce is thickened (2 to 3 minutes).
- Stir in cheese until melted (3 to 4 minutes).
- Pour sauce over potatoes.
- Sprinkle with chives.
- Bake for 60 to 75 minutes or until bubbly and potatoes are fork tender.
