Ham N' Cheese Scalloped Potatoes

  1. Heat oven to 350 degrees.
  2. In 13x9 pan layer potatoes, ham and onion.
  3. In 2 quart saucepan melt butter until sizzling.
  4. Stir in flour, mustard and pepper.
  5. Cook over medium heat, stirring constantly, until smooth and bubbly (1 minute).
  6. Add milk, continue cooking, stirring occasionally, until sauce is thickened (2 to 3 minutes).
  7. Stir in cheese until melted (3 to 4 minutes).
  8. Pour sauce over potatoes.
  9. Sprinkle with chives.
  10. Bake for 60 to 75 minutes or until bubbly and potatoes are fork tender.
