Bbq Lamb And Bacon Kebabs Recipe

  1. Cut the lamb into 2.5cm cubes and place in a bowl with all the marinade ingredients and mix well to coat.
  2. Leave to sit for at least 2 hrs.
  3. Cut capsicum, bacon and onion into 2.5 cm squares.
  4. Cut bacon into strips 10 X 3 cm.
  5. Thread lamb onto skewers, alternating with olives, capsicum, bacon and onion.
  6. Cook in a warm pan, under the grill or possibly on the bbq for about 10 min (depending on how you like your meat cooked).
  7. Turn and baste the lamb with marinade as they cook.
  8. Cut tomato into 6 wedges.
  9. A couple of min before lamb is done thread a piece of tomato onto each end of each skewer.
  10. Serve with rice.
