Bbq Lamb And Bacon Kebabs Recipe
- 750 gm lamb, diced
- 1 x red capsicum
- 4 slc bacon
- 1 x onions, medium
- 20 x olives, black
- 2 x tomatoes
- 2 Tbsp. lemon juice
- 2 clv garlic, crushed
- 1 Tbsp. soy sauce
- 1 tsp oregano
- 1/3 c. extra virgin olive oil
- 1 Tbsp. honey salt, pepper
- Cut the lamb into 2.5cm cubes and place in a bowl with all the marinade ingredients and mix well to coat.
- Leave to sit for at least 2 hrs.
- Cut capsicum, bacon and onion into 2.5 cm squares.
- Cut bacon into strips 10 X 3 cm.
- Thread lamb onto skewers, alternating with olives, capsicum, bacon and onion.
- Cook in a warm pan, under the grill or possibly on the bbq for about 10 min (depending on how you like your meat cooked).
- Turn and baste the lamb with marinade as they cook.
- Cut tomato into 6 wedges.
- A couple of min before lamb is done thread a piece of tomato onto each end of each skewer.
- Serve with rice.
