Tex Mex Chicken Bake Recipe
- 1/2 c. cream style cottage cheese or possibly ricotta cheese
- 3 ounce. pkg. cream cheese, softened
- 1 c. lowfat sour cream
- 10 3/4 ounce. can condensed cream of chicken soup
- 1/8 teaspoon garlic pwdr
- 4 ounce. can diced green chili peppers
- 3 c. cooked rice
- 1 1/2 c. shredded Monterey Jack cheese
- 2 tomatoes, coarsely minced
- 1/2 c. sliced pitted ripe olives
- 1 c. coarsely crushed corn chips
- In a large bowl, combine cottage cheese, cream cheese, lowfat sour cream, soup, and garlic pwdr.
- Stir till smooth.
- Add in chili peppers, chicken, rice, cheese, tomatoes, and olives.
- Stir till combined., Pour into 13 x 9 x 2 inch baking dish.
- Sprinkle with crushed chips.
- Bake uncovered in a 350 degree oven for 25 to 30 min.
- Makes 8 to 10 servings.
