Simple pea and corn salad
- 2 cup peas
- 2 cup canned sweet corn
- 1 1/2 tbsp mayonnaise
- 1 1/2 tbsp dijon mustard
- 1 tbsp dark pumpkin seed oil or olive oil
- 1 salt and pepper
- 4 medium pickles
- 2 tbsp pickle 'juice' - vinegar
- Cook peas in slightly salted water.
- Drain and let cool.
- Drain canned corn and mix with cooked peas in a large bowl.
- Cut the pickles in corn-sized chunks.
- Add them with some of its 'juice'.
- Mix all the sauce ingredients (mustard, mayonnaise, vinegar, oil and spices).
- Add the sauce mixture to the peas, corn and pickles, mix and enjoy.
- Don't forget to taste the sauce as you go!
