Tiny Potatoes With Tasty Toppings

  1. Wash the potatoes.
  2. Boil or steam until barely tender, about 20 minutes.
  3. Do not overcook.
  4. Drain and cool slightly.
  5. Cut a thin slice from the bottom of each potato.
  6. This will help it sit evenly on your serving platter.
  7. Cut off the top of each potato.
  8. Scoop out a small hollow (about the size of a tablespoon) from the center.
  9. ***For convenience, this step may be done ahead; simply cover potatoes with foil, and refrigerate until ready to fill.
  10. To serve, place a spoonful of sour cream in each cavity, with desired topping/toppings.
