Sig's Mini Salmon Pie Bites
- 2 cup mashed potatoes
- 100 grams best smoked salmon , shredded
- 1 or two anchovy filet in olive oil. optional and to taste
- 1/2 tsp black fresh cracked ( ground) pepper
- 80 grams cream cheese drained
- 1 tsp cornstarch
- 1/2 tsp paprika
- 1 pinch chilli flakes
- 1 cup breadcrumbs
- 1 egg beaten
- 1 cup flour
- 2 tsp honey mustard also known as Maille
- 2 tsp sour cream
- 1 good pinch dried dill
- 1 pinch dried chilli flakes
- 1 good handful of baby spinach for serving.
- Make your own favourite mashed potato or use enough bought or packet mash for convenience .
- Make sure there is enough to fill a cup for a person each.
- It should not be runny at all
- Mix with with the cream cheese , smoked salmon , anchovy filets if using them , the cornstarch , chilli flakes, fresh cracked black pepper and paprika
- Make a paste resembling a dough like consistency, roll or shape into mouth sized pieces.
- Roll in flour , then in egg and then in white breadcrumbs.
- Add a little olive oil to the pan and fry gently until heated through and golden crispy brown .
- Make the sauce by mixing honey mustard, sour cream, dill and chilli flakes.
- Serve on a bed of baby spinach
