Sweet and Spicy Simmered Shishito Peppers and Jako Sardines
- 30 Shishito peppers
- 4 tbsp Chirimen jako
- 1 tbsp Mirin
- 2 tsp Soy sauce
- 1/3 tsp Dashi stock granules
- 100 ml Water
- Rinse the shishito peppers and slice diagonally in the center (this allows the flavor to seep in).
- Add vegetable oil to a pan and heat.
- Cook the peppers on high heat.
- Turn off the heat when the peppers are roasted.
- Add the water, dashi granules, mirin, and soy sauce and turn on the heat again.
- Reduce the liquid by half, then add the jako sardines.
- When the liquid evaporates and simmers down, it's finished.
