Falafel Lavash Wraps Recipe
- 6 tablespoons tahini
- Juice of 2 lemons
- 1 large garlic clove, minced
- Kosher salt
- 1/4 cup olive oil
- 1 recipe Classic Falafel (link in intro)
- 1/2 English cucumber, diced
- 1 ripe red tomato, stemmed and diced
- 1/4 red onion, thinly sliced
- 1/4 cup chopped fresh flat-leaf parsley
- 1/2 teaspoon sumac
- Kosher salt
- 1 cup hummus
- Harissa
- 4 to 5 pieces lavash bread
- Prepare the falafel as directed.
- To make the dressing, put the tahini, lemon juice, garlic, and a pinch of salt into an airtight jar; close the jar and shake vigorously.
- Add the olive oil and shake again.
- Thin with water until pourable, if necessary.
- Set aside.
- In a bowl, toss together the cucumber, tomato, red onion, and parsley.
- Season with the sumac and a little salt.
- To make the wraps, toast the lavash in a large frying pan.
- For each wrap, layer hummus, the cucumber mixture, and 3 pieces falafel.
- Drizzle with some of the harissa and tahini dressing.
- Roll up burrito-style and serve.
