Shasta Mountain Brownies
- 6 oz. bittersweet chocolate
- 1 c. unsalted butter (2 sticks)
- 4 large eggs
- 2 1/4 c. sugar
- 1 tsp. vanilla
- 1/2 c. plus 2 Tbsp. flour
- 1/2 c. chopped pecans
- 1 c. chocolate cookie crumbs (about 10 crushed by hand, processor or blender)
- Preheat oven to 350u0b0.
- Grease, then flour two 9 x 9-inch pans. Melt chocolate and butter over low heat; cool.
- Beat eggs, sugar and vanilla until thick and smooth, about 3 minutes.
- Stir in the chocolate-butter mixture, then slowly add the flour.
- Do not overmix.
- Fold in the cookie crumbs and most of the pecans. Spread the batter evenly into pans and sprinkle with remaining nuts.
- Bake about 40 minutes, or until set.
- (Brownies will be soft in the center.)
- Let cool completely.
- Yields 18 brownies. Enjoy.
