Grilled Lobster Tails(Aragosta Coda Alla Griglia)

  1. Preheat
  2. grill.
  3. Cut
  4. lobster
  5. along
  6. edges
  7. of
  8. tail undershells with scissors.
  9. Clip
  10. off
  11. fins
  12. on
  13. outer
  14. edges. Peel back and discard
  15. soft
  16. undershell.
  17. Bend tail backwards, cracking joints to prevent
  18. curling.
  19. In saucepan mix together butter, garlic, lemon juice, parsley, salt, pepper and chives; saute for 1 to 2
  20. minutes.
  21. Brush
  22. lobster
  23. tails
  24. with butter mixture.
  25. Grease rack and
  26. place lobsters, shell side down, on hot grill.
  27. Cover tail with foil and grill for 5 to 7 minutes. Brush again with butter
  28. sauce
  29. and
  30. turn
  31. lobster.
  32. Cover and cook an additional 3 to 5 minutes, until lobster turns opaque. Serve with remaining sauce.
  33. Garnish
  34. with
  35. lemon
  36. wedges
  37. and serve with drawn butter, if desired.
  38. Makes 4 servings.
