Grilled Lobster Tails(Aragosta Coda Alla Griglia)
- 4 (10 oz.) lobster tails
- 1/2 c. butter
- 1 clove garlic, minced
- 3 Tbsp. lemon juice
- 1 tsp. parsley, minced
- salt and pepper to taste
- 1 Tbsp. chives, chopped
- lemon wedges
- Preheat
- grill.
- Cut
- lobster
- along
- edges
- of
- tail undershells with scissors.
- Clip
- off
- fins
- on
- outer
- edges. Peel back and discard
- soft
- undershell.
- Bend tail backwards, cracking joints to prevent
- curling.
- In saucepan mix together butter, garlic, lemon juice, parsley, salt, pepper and chives; saute for 1 to 2
- minutes.
- Brush
- lobster
- tails
- with butter mixture.
- Grease rack and
- place lobsters, shell side down, on hot grill.
- Cover tail with foil and grill for 5 to 7 minutes. Brush again with butter
- sauce
- and
- turn
- lobster.
- Cover and cook an additional 3 to 5 minutes, until lobster turns opaque. Serve with remaining sauce.
- Garnish
- with
- lemon
- wedges
- and serve with drawn butter, if desired.
- Makes 4 servings.
