Curried Rice Pilaf With Lamb Recipe
- 2 tbsp. butter
- 4 lamb shoulder chops, about 1 1/4 pound
- 2/3 c. long grain rice
- 1/2 c. grated carrot
- 1/4 c. raisins
- 2 tbsp. minced onion
- 1/2 teaspoon salt
- 1/2 teaspoon curry pwdr
- 2 tbsp. slivered almonds (if you like)
- 1 1/2 c. chicken broth
- Heat oven to 350 degrees.
- Grease shallow 2 qt baking dish.
- In large skillet, brown chops in butter.
- Remove chops; sprinkle with salt and pepper.
- Add in rice to pan drippings; cook, stirring constantly, till grains turn golden.
- Stir in remaining ingredients; pour into prepared dish.
- Arrange chops on top.
- Bake covered at 350 degrees for 40-50 min or possibly till rice and chops are tender and liquid is absorbed.
- Makes 4 servings.
