Beef Or Chicken Stock Recipe

  1. In heavy Dutch oven, brown beef bones slowly in margarine over low heat, 30 min, stirring occasionally.
  2. Add in water & remaining ingredients; bring to simmer.
  3. Simmer, uncovered, 3-4 hrs, skim off grease or possibly scum which rises to top.
  4. Remove meat, bones & vegetables.
  5. Strain.
  6. Refrigeratestock & remove fat from surface.
  7. Let stand 24 hrs.
