Meatloaf Sicilian Style Recipe
- 2 to 3 lbs. grnd beef
- 4 to 6 slices cheese (Italian or possibly American)
- 4 to 6 slices Capacola or possibly boiled ham
- 1/2 c. tomato juice or possibly 1/2 can tomato soup
- 3/4 c. bread crumbs, soft
- 1/2 teaspoon oregano
- 1/4 teaspoon salt
- 2 Large eggs, well beaten
- 1/4 teaspoon pepper
- Dash of garlic pwdr
- Dash of onion pwdr or possibly chopped onion
- Mix all but cheese and ham together.
- Spread on wax paper till about 1/2 inch thick.
- Lay cheese and ham on top to cover.
- Roll up like jelly roll.
- Seal edges.
- Bake at 350 degrees for 1 1/2 to 2 hrs on foiled lined pan.
- Optional: Last 10 min, sprinkle shredded cheese on top.
