Ricotta Pancake
- 1 1/2 cup flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 2 large egg yoke
- 2 tbsp sugar
- 2 tbsp lemon zest (or to taste)
- 1/2 cup ricotta cheese
- 2 large egg whites
- Mix dry ingredients together, set aside
- Mix wet ingredients, add to dry ingredients, mix well
- Beat egg whites until they form soft peaks, then fold in to mixture
- Heat pan use 1/4 cup of batter, cook until golden brown flip
