Banana Orange Muffin Cake
- 1 1/2 c. all-purpose flour
- 1 c. Quaker oats (quick or old fashioned), uncooked
- 1/3 c. firmly packed brown sugar
- 1 Tbsp. baking powder
- 1/2 tsp. baking soda
- 2/3 c. mashed ripe banana (2 small)
- 1/2 c. orange juice
- 1 egg, lightly beaten
- 1/2 c. powdered sugar
- 1/4 tsp. salt (optional)
- 1/3 c. margarine, melted
- 1/2 tsp. grated orange peel
- 1 tsp. orange juice
- 1/2 tsp. grated orange peel
- Heat oven to 400u0b0.
- Grease bottom of 9-inch round spring-form pan or cake pan.
- Combine dry ingredients.
- Add combined banana, juice, margarine, egg and orange peel, mixing just until moistened.
- Pour into prepared pan.
- Bake 30 to 35 minutes or until golden brown.
- Cool 10 minutes on wire rack; remove from pan.
- Combine remaining ingredients and drizzle evenly over cake while still warm.
