Eggplant Balls

  1. Peel and cut eggplant.tlace in boiling water and cook for 1/2
  2. hour or until soft.
  3. Drain in colander for 1/2 hour. Combine all
  4. ingredients
  5. except
  6. sauce and peppers.
  7. Mix and shape into balls.
  8. Place in heated frying pan with oil and fry until slightly
  9. brown.
  10. Place

  12. flat
  13. baking
  14. sheet.
  15. Fry peppers and place on eggplant balls, scattering over top.
  16. Add sauce to top of peppers; cover and bake at 350u0b0 for 30 minutes in preheated oven. Makes
  17. 60
  18. balls.
  19. After
  20. frying
  21. place in sauce instead of meatballs.
