Italian Pasta Stir-Fry
- 8 oz. linguini (uncooked)
- 2 medium tomatoes, seeded and chopped
- 1 medium onion, chopped
- 1 medium zucchini, sliced
- 1/4 c. parsley, snipped
- 1 Tbsp. olive oil
- 2 garlic cloves, pressed
- 1 tsp. each dried basil and oregano leaves
- 1/8 tsp. each salt and pepper
- about 1/4 c. grated Parmesan cheese
- Cook linguini according to package directions, drain and keep warm.
- Heat oil in a large skillet.
- Press garlic into hot oil and stir-fry 15 seconds.
- Add onion and zucchini; stir-fry 2 to 3 minutes or until tender.
- Add tomatoes, parsley and seasonings. Stir gently until heated through.
- Remove from heat and stir in linguini.
- Grate Parmesan cheese over pasta.
- Serve immediately. Yield:
- 8 servings.
