Italian Pasta Stir-Fry

  1. Cook linguini according to package directions, drain and keep warm.
  2. Heat oil in a large skillet.
  3. Press garlic into hot oil and stir-fry 15 seconds.
  4. Add onion and zucchini; stir-fry 2 to 3 minutes or until tender.
  5. Add tomatoes, parsley and seasonings. Stir gently until heated through.
  6. Remove from heat and stir in linguini.
  7. Grate Parmesan cheese over pasta.
  8. Serve immediately. Yield:
  9. 8 servings.
