Spicy Black Bean Tacos

  1. Saute onion and butter in skillet until.
  2. it starts to brown.
  3. Add garlic and saute 1 minute more, until garlic is fragrant.
  4. Add black beans, undrained, and jalepenos.
  5. Mash bean mixture with potato masher to desired consistency.
  6. I like them slightly mashed.
  7. Bring to a boil, then turn down and simmer until most of the liquid is evaporated.
  8. I always taste at this point then add salt and pepper if needed, I usually don't need it.
  9. Serve in taco shells or tortilla's with desired toppings.
