Mexican Meat Loaf
- 1 1/2 lb. ground meat
- 3/4 c. oats, uncooked
- 1/2 c. tomato juice
- 1 egg, beaten
- 2 Tbsp. minced onion
- 2 tsp. salt
- 1 Tbsp. chili powder
- 1 tsp. pepper
- 3 Tbsp. butter
- 3 Tbsp. self-rising flour
- 1 1/2 c. milk
- 8 slices American cheese
- 1 (12 oz.) can whole kernel corn with sweet peppers, drained
- 2 small green peppers, cut into rings
- Combine the first 8 ingredients; mix lightly.
- Put into 2-quart baking dish and bake at 350u0b0 for 45 minutes.
- Melt butter in pan.
- Add flour and cook gradually add milk; cook until thick and smooth.
- Add cheese and stir until smooth.
- Stir in corn. Pour over meat and top with pepper rings.
- Bake 350u0b0 for 20 minutes.
