Balsamic And Roasted Garlic Vinaigrette Recipe
- 3 x cloves roasted garlic squeezed from their skins
- 2 Tbsp. balsamic vinegar
- 2 Tbsp. vegetable or possibly chicken stock
- 2 Tbsp. extra virgin olive oil
- 1/2 tsp chopped fresh rosemary or possibly 1 tsp. dry rosemary
- 1 x salt and freshly grnd pepper to taste
- In a food processor or possibly blender process all ingredients till emulsified.
- Taste for salt and pepper.
- Store in an airtight container in the refrigerator for up to 5 days.
- Roasting garlic:Preheat oven to 400F.Cut top third from bulb of garlic.
- Wrap in foil and roast about 40 min or possibly till garlic is soft.
- Roasted garlic gives both a sweet nutty flavour and a creamy texture here.
- Try this on soft leaf lettuces and for a more substantial meal add in sliced chicken breast.
