Hawaiian Meatballs
- 1 1/2 lb. extra lean ground beef
- 2 c. cracker crumbs
- 1 egg
- 1/4 c. milk
- 1/3 c. minced onion
- 1 1/2 tsp. ginger
- 1 Tbsp. shortening
- 1 (13 1/2 oz.) can pineapple tidbits, drained (reserve syrup)
- 2 Tbsp. cornstarch
- 1/3 c. vinegar
- 1 Tbsp. soy sauce
- 1/3 c. chopped green pepper
- Mix beef, crumbs, onion, egg, salt, ginger and milk.
- Shape mixture into tablespoon sized balls.
- Melt shortening into large skillet.
- Brown and cook meatballs.
- Remove meatballs from skillet and pour off fat.
- Mix cornstarch and sugar.
- Stir in pineapple juice, vinegar and soy sauce until smooth.
- Pour into skillet and cook over medium heat until thick.
- Boil and stir 1 minute.
- Add meatballs, tidbits and peppers.
- Heat thoroughly.
