Herb Roasted Turkey with Maple Sweet Potato Mash

  1. HEAT olive oil in skillet over medium heat.
  2. SEASON both sides of the turkey cutlets with the sage, thyme, marjoram, salt and pepper.
  3. Place cutlets in pan and cook until cutlets are brown on both sides and cooked through.
  4. MASH sweet potatoes with orange juice, syrup and 1 Tbsp.
  5. of the spread.
  6. Stir in pecans.
  7. Serve 1/4 of mashed potatoes alongside 1, 4 oz.
  8. turkey cutlet.
  9. CUT a strip from the top of each apple.
  10. Place in a microwavable dish.
  11. Mix together sugar, cinnamon, nutmeg, raisins and remaining 1 Tbsp.
  12. of the spread.
  13. Stuff equal amounts of the mixture into apples.
  14. Microwave apples on LOW for 5 to 6 min.
  15. until tender.
  16. Serve each person 1 apple.
  17. COMPLEMENT each dinner with an 8 fl oz (1 cup) glass of water.
