Herb Roasted Turkey with Maple Sweet Potato Mash
- 3 Tbsp. olive oil
- 1 lb. turkey cutlet, (4, 4 oz. uncooked cutlets)
- 1 tsp. ground sage
- 1/2 tsp. ground thyme
- 1 tsp. ground marjoram
- 1/2 tsp. salt
- 1 tsp. black pepper
- 4 medium, baked sweet potatoes Safeway 2 pkg For $5.00 thru 02/09
- 4 fl oz (1/2 cup) orange juice
- 1/3 cup , sugar free
- 2 Tbsp. low-fat butter flavor spread, melted, divided
- 1/4 cup pecans, chopped
- 4 medium apples, cored
- 2 tsp. packed brown sugar
- 1 tsp. ground cinnamon
- 1/2 tsp. nutmeg
- 2 Tbsp. raisins
- 32 fl oz (4 cups) drinking water
- HEAT olive oil in skillet over medium heat.
- SEASON both sides of the turkey cutlets with the sage, thyme, marjoram, salt and pepper.
- Place cutlets in pan and cook until cutlets are brown on both sides and cooked through.
- MASH sweet potatoes with orange juice, syrup and 1 Tbsp.

- Stir in pecans.
- Serve 1/4 of mashed potatoes alongside 1, 4 oz.
- turkey cutlet.
- CUT a strip from the top of each apple.
- Place in a microwavable dish.
- Mix together sugar, cinnamon, nutmeg, raisins and remaining 1 Tbsp.
- of the spread.
- Stuff equal amounts of the mixture into apples.
- Microwave apples on LOW for 5 to 6 min.
- until tender.
- Serve each person 1 apple.
- COMPLEMENT each dinner with an 8 fl oz (1 cup) glass of water.
