Carrot Bran Muffins

  1. Preheat oven to 375F Lightly grease muffin cups or spray with cooking spray.
  2. In a small bowl, stir cereal with orange juice and yogurt.
  3. Let soak while preparing muffins.
  4. Using a fork, stir flour with baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl.
  5. In a small bowl, beat egg.
  6. Whisk in oil and vanilla.
  7. Stir into soaked cereal along with brown sugar.
  8. Pour into flour mixture, stirring just until combined.
  9. Fold in dates, raisins, and carrots.
  10. Bake for 20 minutes or until toothpick comes out clean.
  11. Cool 5 minutes in pan before removing.
  12. Muffins freeze very well.
  13. Serve warm (reheat in microwave).
