Healthified Sassy Cinnamon Cookies

  1. Heat oven to 375F (If using dark or non-stick pan, heat oven to 350 F.).
  2. In a large bowl, beat 1 1/2 cups sugar, butter, vanilla and egg with electric mixer on medium speed (or mix with a spoon) until creamy.
  3. Stir in flour, cream of tartar, baking soda and salt.
  4. Stir in cinnamon chips and pecans.
  5. In a small bowl, mix 1/4 cup sugar and 2 teaspoons cinnamon.
  6. Shape dough by tablespoonfuls into 1-inch balls.
  7. Roll balls in cinnamon-sugar.
  8. On ungreased cookie sheet, place balls 1 inch apart.
  9. Bake 7 to 10 minutes or until set and light brown.
  10. Immediately remove from cookie sheet to wire rack.
