Healthified Sassy Cinnamon Cookies
- 1 12 cups sugar
- 12 cup butter, softened (or margarine)
- 1 teaspoon vanilla extract
- 2 eggs (or 1/2 cup fat-free egg product)
- 2 12 cups flour
- 1 teaspoon cream of tartar
- 12 teaspoon baking soda
- 14 teaspoon salt
- 1 cup cinnamon baking chips (cinnamon-flavored baking chips)
- 1 cup pecans, chopped
- 14 cup sugar
- 2 teaspoons cinnamon, ground
- Heat oven to 375F (If using dark or non-stick pan, heat oven to 350 F.).
- In a large bowl, beat 1 1/2 cups sugar, butter, vanilla and egg with electric mixer on medium speed (or mix with a spoon) until creamy.
- Stir in flour, cream of tartar, baking soda and salt.
- Stir in cinnamon chips and pecans.
- In a small bowl, mix 1/4 cup sugar and 2 teaspoons cinnamon.
- Shape dough by tablespoonfuls into 1-inch balls.
- Roll balls in cinnamon-sugar.
- On ungreased cookie sheet, place balls 1 inch apart.
- Bake 7 to 10 minutes or until set and light brown.
- Immediately remove from cookie sheet to wire rack.
