Black Bean and Turkey Stew
- 3 (15 ounce) cans black beans, drained and rinsed
- 1 12 cups chopped onions
- 1 12 cups reduced-sodium fat-free chicken broth
- 1 cup sliced celery
- 1 cup chopped red bell pepper
- 4 garlic cloves, minced
- 1 12 teaspoons dried oregano leaves
- 34 teaspoon ground coriander
- 12 teaspoon ground cumin
- 14 teaspoon ground red pepper
- 6 ounces cooked turkey sausage, thinly sliced
- Combine all ingredients in slow cooker, except sausage.
- Cover; cook on LOW 6 to 8 hours.
- Transfer about 1-1/2 cups bean mixture from slow cooker to blender or food processor; puree bean mixture.
- Return to slow cooker.
- Stir in sausage.
- Cover; cook on LOW an additional 10 to 15 minutes.
