Texas Caviar

  1. Drain black eyed peas, pinto beans, corn, and pimientos.
  2. Combine in a large bowl with the celery and green pepper.
  3. Set aside.
  4. Combine remaining ingredients in a medium saucepan.
  5. Boil briefly.
  6. Pour liquid over the above bean mixture and marinate overnight in the refrigerator.
  7. Best served with Fritos Scoops or Tostitos Scoops!
