Maple Syrup Apple Bran Muffins
- 1 1/4 cups bran
- 1 cup pastry flour, whole wheat
- 2 1/2 teaspoons baking powder
- 3/4 teaspoon nutmeg
- 1/4 teaspoon cloves, ground
- 13 cup milk
- 2 large eggs
- 3/4 cup maple syrup
- 1/4 cup butter
- 1 cup apples green are best, chopped
- 1 cup raisins, seedless (optional)
- Combine bran, flour, baking powder, nutmeg and cloves; set aside.
- Cream together milk, eggs, maple syrup, and butter; fold in flour mixture.
- Stir in apples and raisins if using.
- Pour into oiled muffin tins, and bake at 350F (180C) until tops split, 15 to 25 minutes.
