Indian Golden Chicken
- 2 lb. chicken tenders
- 1 small can tomatoes
- 2 large onions, sliced
- 1 piece ginger, chopped
- 4 cloves garlic, chopped
- 1 c. yogurt
- 4 Tbsp. salad oil
- 1 tsp. turmeric powder
- 1/2 tsp. coriander powder
- 1/2 tsp. cinnamon powder
- 4 cloves
- 5 peppercorns
- 1/2 tsp. parsley flakes
- salt to taste
- Saute onions, ginger and garlic in shortening or salad oil. Heat yogurt in a small saucepan and add all seasonings.
- Put chicken in pan with sauteed onion mixture.
- Pour yogurt mixture and tomatoes over this.
- Mix well and cover pot, letting it cook on medium for 20 minutes, stirring occasionally, until chicken is tender.
- Remove lid and brown the chicken until much of the liquid evaporates.
- Serve over rice or couscous.
