Southern Raised Biscuits
- 2 1/2 c. all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/4 c. sugar
- 1 envelope yeast
- 1 c. low-fat buttermilk, warmed
- 1/4 c. acceptable vegetable flour
- Mix dry ingredients together in a large bowl; set aside. Dissolve yeast in slightly warmed buttermilk.
- Add buttermilk mixture and oil to flour mixture.
- Stir gently and quickly until mixed.
- Turn dough onto a lightly floured board and knead gently 20 to 30 times.
- Roll out or pat to a 1/4-inch thickness.
- With a floured 1-inch biscuit cutter, make 60 biscuits, then brush each biscuit with oil.
- Place 30 biscuits on an ungreased baking sheet. Place another biscuit on top of each.
- Cover and let rise in a warm place (about 85u0b0) for about 2 hours.
- Preheat oven to 375u0b0.
- Bake 12 to 15 minutes.
- Makes 30 servings.
