Sweet Potato Pie(Sugar Free)
- 3 c. sweet potatoes
- 1 stick softened butter
- 1 c. unsweetened apple juice concentrate
- 3 eggs
- 1/4 tsp. salt
- 1/2 tsp. vanilla extract
- 1/4 tsp. each - cinnamon, cloves, ginger, nutmeg and allspice
- 1 c. milk
- 2 (9-inch) pie shells, prick bottoms with fork
- Preheat oven to 350u0b0.
- Boil sweet potatoes until tender, cool. Then peel and mash.
- Warm apple juice concentrate and mix with softened butter.
- Beat 3 eggs and combine with butter and apple juice mixture.
- Add salt, vanilla extract and spices.
- Stir in the mashed sweet potatoes.
- Add the cup of milk and beat the mixture well with an electric mixer and pour into the pie shells.
- Bake at 350u0b0 for 1 hour or until the center is firm.
- Makes 2 pies.
