Yogurt Strawberry Fool Pie

  1. Preheat oven to 300 degrees.
  2. Combine the vanilla wafers and softened butter in a bowl.
  3. Press mixture evenly onto the bottom and sides of an ungreased 9" pie plate.
  4. Bake 15-20 minutes or just until browned.
  5. Set aside to cool, at least 30 minutes.
  6. In a medium sized bowl combine the strawberries, sugar and yogurt.
  7. Beat the whipping cream in another bowl until stiff peaks form (approximately 3-4 minutes.
  8. ).
  9. Gently fold in the whipping cream with the strawberry mixture.
  10. Carefully spoon into the prepared crust.
  11. Cover pie well and freeze until firm, at least 8 hours or overnight.
  12. Remove pie from freezer 30 minutes prior to serving.
  13. Garnish each serving with mint leaf and strawberry slice if desired.
