Chicken Couscous Stew

  1. Cut chicken into bite size pieces.
  2. Measure vegetable oil into a 10-inch skillet; heat until hot.
  3. Add chicken to skillet and cook until it begins to brown.
  4. Add onion to skillet and cook until chicken is browned and onion is translucent.
  5. Add remaining ingredients except couscous.
  6. Bring to a simmer and lower heat.
  7. Simmer for 20 to 30 minutes.
  8. Add couscous and taste to correct seasoning.
  9. Continue heating until couscous is thoroughly heated.
