Beef And Vegetable Eggrolls
- 1 lb. ground beef
- 1 c. carrots, sliced fine and thin
- 1 c. green beans (fresh), sliced fine and thin
- 1 c. celery, chopped
- 1 c. cabbage, chopped thinly
- 1 medium size onion, chopped
- 1 tsp. minced garlic
- 3 Tbsp. soy sauce
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. oyster sauce
- 1 pkg. eggroll wrappers (25 per pkg.)
- 3 Tbsp. oil (any kind)
- Saute minced garlic and onion in hot skillet with oil in it. Add the ground beef until brown and done.
- When the ground beef is done, add all vegetables, 1/2 salt, 1/2 pepper and 1 tablespoon oyster sauce.
- Simmer it at least 4 minutes (don't overcook the vegetables).
- Let cool and put in colander to drain.
- After cooled, spoon some of the mixture onto an eggroll wrapper and wrap it.
- Fold both sides and roll it.
- Brush with flour and water on underside flap to seal.
- Deep fry at 350u0b0 in 1/2 inch of oil for 3 to 8 minutes, turning onto both sides for even color.
- When brown, ready to serve.
